Pop Up: Mardi Gras in the Garden

Join Chef John Folse, Louisiana Culinary Ambassador to the World, and his culinary entourage for Mardi Gras in the Garden! This is a return visit to The Chef’s Garden for Folse after presenting the keynote address at the 2016 Roots Conference. Chef Folse’s menu features many of his favorite Creole dishes including an array of fresh purple, green and gold vegetables – the colors of Mardi Gras – plucked fresh from The Chef’s Garden.

Chef Folse is a long-time friend of the farm, and a legendary chef with an illustrious career. He is internationally renowned for introducing Louisiana’s indigenous cuisine and culture to the world through his restaurants, cookbooks, educational initiatives, and leadership in culinary organizations, and has been recognized with an extraordinary list of lifetime achievement accolades. He is truly an icon in the culinary field, and we are thrilled to have him back in our kitchen.

To add to the party, we welcome back The Zydeco Kings with their lively sounds from down on the bayou.

A portion of the proceeds of the evening will be donated to Share Our Strength’s No Kid Hungry campaign, a national nonprofit that is ending child hunger in America by ensuring children get the healthy food they need, every day.


Gumbo des Herbes

Nine greens, smoked ham, beef brisket, spicy Louisiana sausage, heirloom peas


Seared Tuna Salad

Black skillet-seared tuna, Creole rémoulade, mustard blossoms,

bowtie arugula, purple ninja radish, red ribbon sorrel


Crawfish-stuffed Turban of Trout

Roasted Brussels sprouts, pea tendrils, truffle lobster sauce


Pecan Wood-Smoked and Sweet Tea-Brined Duck

Carnival cauliflower, blue stone-ground corn grits


Red Velvet Cheesecake

Red velvet Creole cream cheese cheesecake withcrème anglaise


Doors open at 6:30, dinner begins at 7:00.

Dinner: $100 per person, plus tax and service charge.

In addition, Cocktails inspired by The Big Easy, full bar, wine pairings and craft beers will all be available

Dress Code: The dress code is casual at all of our events unless otherwise noted; we dress as if we are entertaining friends in our home.

Please note that the drive and parking lot are unpaved so may be dusty in dry weather or muddy in inclement weather.

Cancellation Policy: Payment information is taken at the time of reservation. Due to our size and the unique nature of each of our events, cancellations affect us greatly. We must receive notice of cancellation no less than 48 hours prior to the event for credit of your payment.
