This Lecture Series will provide insight into how everyone can benefit from plant-based dining. By popular demand, we are delighted to be welcoming back Dr. Caldwell B. Esselstyn Jr. as he shares the power of a plant-based harvest to end heart disease. Dr Esselstyn’s research is hugely compelling for patients requiring dramatic results. He will be presenting his startling results on the impact of vegetables on health while his daughter, Jane Esselstyn, RN, author and researcher, discusses her approach to cooking and ingredients. Illustrating how “Prevention is the new cure,” she implements his findings into her recipes for delicious and healthful living. And what better place or time to explore the world of plants than right here, as we collaborate at the CVI, in the heart of the summer.

Last January Dr. Caldwell Esselstyn, collaborator in the documentary Forks Over Knives, and author of The Prevent and Reverse Heart Disease Book was here to introduce his research and Jane Esselstyn’s cookbook on the same topic. Since then we have heard from several of our CVI guests that they have changed their lifestyle as a result of the Esselstyns’ inspiration, and have a whole new appreciation for the impact of vegetables on health and well-being.

Doors open at 6:30 pm for cocktails.

7:00-7:30 Dr. Caldwell Esslestyn and Jane Esselstyn RN discuss the almost immediate health benefits and common perceived challenges of a plant-based diet.

7:30 5-course ‘Esselstyn’ Dinner interpreted by CVI Chef Jamie Simpson

$100 per person, plus tax and service charge.

Dress Code: The dress code is casual at all of our events unless otherwise noted; we dress as if we are entertaining friends in our home. Please note that the drive and parking lot are unpaved so may be dusty in dry weather or muddy in inclement weather.

Cancellation Policy: Payment information is taken at the time of reservation. Due to our size and the unique nature of each of our events, cancellations affect us greatly. We must receive notice of cancellation no less than 48 hours prior to the event for credit of your payment.
